Carafe Warms Up the Palate with New Seasonal Dishes

Pascal Sauton’s French bistro cooking continues to evolve with the seasons highlighting ingredients from Pacific Snapper to Smoked Pheasant and Gnocchi with Dungeness Crab. Carafe’s three-course prix fixe dinner menu continues for $20 with rotating selections.

Warm Weather Prelude:
Carafe warms up the palate with new seasonal menu items, including Pascal Sauton’s winning dish from the Oregon Seafood Chef Competition, Salmon Effeuillée. Sauton will represent Oregon in August at the Great American Seafood Cook-off in New Orleans.
• Poached Leeks with braised oxtail, egg mimosa and mustard vinaigrette
• Salmon Effeuillée, thin slices of wild salmon cooked in the plate with a creamy Dungeness crab broth
• Arugula Risotto with smoked pheasant and apple
• Crispy Confit of Duck Leg with pear-fennel compote
• Pan-seared Pacific Snapper with shell beans, clams and roasted peppers
• Passion Fruit Custard with lavender ice cream, almond croquant and huckleberry sauce
• French Trifle with layers of crème brulée, genoise and marinated mango with gelée au sémillon

Happy Hour or France on the Cheap
If a Paris café seems too far to travel for your evening repast, Carafe offers food and drink specials during happy hour -- Monday through Friday from 3:00 p.m. to 6:00 p.m. Pair a Slow-roasted Pork Sandwich ($3) or Goat Cheese Spread on walnut crostini ($3) with a French Martini with vodka, crème de Framboise and pineapple juice or a Jupa Gin with gin, fresh squeezed lime juice, sugar syrup and tonic. Carafe’s Happy Hour menu also offers beer, wine and aperitifs…and of course, pommes frites ($3).
